Les protines concernes sont, en particulier, l'albumine et la globuline. Aprs rchauffement, on rcupre par affleurement la ricotta superficielle. Les nouvelles techniques utilisent la raction de saturation par le sel permettant d'amliorer le rendement et la qualit. La partie coagule par rchauffement est dpose dans des rcipents perfors (anciennement des paniers en osier) pour permettre l'coulement du liquide excdent. Sa priode de dgustation optimale s'tale de juin septembre aprs un affinage de 10 jours, mais est maintenant produite toute l'anne avec les techniques modernes de fabrication. Elle peut se dguster sale ou sucre, ou aussi sale et sche pour tre utilise rape, crue ou cuite.
