About the Book

Food safety is a key issue of the 1990s and development of the ideas presented here (the effective technologies that can prevent bacterial colonization during propagation) will lead to marketing of enteropathogen-free fresh poultry which will effectively reduce an important health hazard for consumers. This health hazard, gastrointestinal human disease, is associated with consumption of foods that are contaminated with Salmonella, Campylobacter, and Listeria E. Coli. Fresh poultry is a highly publicized source of these enteropathogens. This book features current research approaches to controlling the colonization of these pathogens in poultry, which include: immunological approaches, competitive exclusion technology, environmental intervention techniques and molecular genetic methods.

Table of Contents:
Part 1 Environmental factors and sources, J.S.Bailey; environmental factors contributing to Salmonella colonization of chickens, F.Jones et al; environmental factors affecting enteropathogens in feed and feed mills, D.A.Gabis; environmental factors associated with Campylobacter jejuni colonization of poultry, S.M.Shane; potential for reduction in colonization of poultry by Campylobacter from environmental sources, D.M.Rollins. Part 2 Competitive exclusion, Esko Nurmi; population dynamics of the intestinal tract, R.D.Rolfe; experience with competitive exclusion in the Netherlands, R.W.A.W.Mulder and N.M.Bolder; developments in competitive exclusion to control Salmonella carriage in poultry, G.C.Mead; alternative administration of competitive exclusion treatment, N.S.Cox et al; transmission of human bacterial pathogens through poultry, R.V.Tauxe. Part 3 Mechanisms of colonization, N.J.Stern; colonization of chicks by Campylobacter jejuni, M.P.Doyle; aspects of virulence and intestinal colonization by Salmonella, C.L.Gyles et al; virulence properties of Salmonella enteritidis isolates, C.E.Benson and R.J.Eckroade; experimental Salmonella enteritidis infection in chickens, C.W.Beard and R.K.Gast. Part 4 Immunization, R.J.Meinersmann; nonrecombinant and recombinant avirulent Salmonella live vaccines for poultry, R.Curtiss et al; immunological control of Salmonella in poultry, P.A.Barrow; intestinal immunity and genetic factors influencing colonization of microbes in the gut, H.S.Lillehoj and K.S.Chung; is vaccination a feasible approach for the control of Salmonella?, K.V.Nagaraja et al.
