Founder Marc Summers started Bubala as a pop up, a passion project to escape the drudgery of financial consulting and a channel for his constant daydreaming about food. He has successfully turned his dream into a cult restaurant brand in Lodon, with two current sites, one in Spitalfields and one in the heart of Soho, a third spot to be opened in 2025 in King's Cross and plans for more!
