About the Book
Dairy Process Engineering (Practical Book) has been designed to educate us about the equipments used for producing cream, butter, ghee, icecream, cheese and so on. This practical book consisting of all relevant and useful approaches dealt within the subject for proper conduct of experiments was greatly felt. Therefore, preparation of practical books for different courses was taken up.It was also prepared in a consolidated and comprehensive form to provide needed information on the practical aspects and equipment employed for dairy and food engineering requirement write for undergraduate student of dairy and food technology in the country. The book covers the practical aspects and various theoretical approaches use in dairy for processing. The book primarily consists of experiments on equipment, such as Evaporations, Drying and Membrane Processes as applied in dairy and food industry keeping in view the requirement of B.Tech. (Dairy Technology) program being run in the country. It is based on the fifth dean committee practical syllabus. It covers entire course in deep. No need to search practical course work from any other outer sources.
About the Author :
Dr. (Mrs.) Seema Tanwar has obtained her B.Tech. (Food Technology) from C.D.F.S.T. in 2009, M. Tech. and Ph. D. (Processing and Food Engineering) from C.T.A.E., M.P.U.A.T., Udaipur in 2014 and 2018 respectively. She has been working in College of Dairy and Food Science Technology as Technical Assistant, Senior Research Fellow and now as Guest Lecturer since 2009. She has 40 research and review publications in various international/ national journals and seminars and 2 books in the field of dairy and food engineering. Her fields of interest are food engineering, agricultural processing and dairy engineering. Dr. Vishvambhar Dayal Mudgal, presently working as Dean, College of Dairy and Food Science Technology, Maharana Pratap University of Agriculture and Technology, Udaipur, Rajasthan. He has vast experience of over 30 years in the field of research. He has graduated in Agricultural Engineering from Sukhadia University, did M. Tech. from IIT, Kharagpur and Ph.D. from NDRI, Karnal. He also worked as Head, Processing and Food Engineering, PI, AICRP on PHET, MPUAT, Udaipur. He has also developed many field worthy post-harvest technologies and equipments. He has organized many national seminar, summer school, model training course and workshop on post-harvest technology and value addition of food materials for augmenting rural prosperity through establishment of agro-processing activities in the production catchments. He is a Fellow member of ISAE and Institution of Engineers (India). He has published 25 Books/ Proceedings/ Book chapters and more than 40 papers in peer-reviewed national and international reputed research Journals/ Conferences. He has been conferred Lifetime Achievement Award by Blue Planet Society, Prayagraj, UP. Kamlesh Kumar Meena is presently working as an Incharge & Assistant Professor in Department of Dairy and Food Microbiology, College of Dairy and Food Science Technology, Maharana Pratap University of Agriculture and Technology, Udaipur, Rajasthan. He has obtained his B.Tech. degree in Dairy Technology from CDFST, Udaipur(Raj.) and PG degree in Dairy Microbiology from National Dairy Research Institute, Karnal (Haryana). He has 6 years teaching experience and also worked as a Senior Executive in the Quality Assurance Department of the Gujarat Co-operative Milk Marketing Federation Ltd. (AMUL), Anand (Gujarat) for 4.5 years. He has 13 research article publications in national and international journals and 15 book chapters/practical manuals, technical and popular articles. He has attended various National seminars/ workshops/summer schools. He has an Internal Auditor Certificate from Den Net Vertis (DNV), Germany to conduct Internal Quality Audits in Dairy & Food Industry. He is a member of Indian Dairy Association, New Delhi, Life Member of Society of Biological Chemists, India, Member of Advisory Committee of Alumni Association, CDFST, Treasurer, Teacher's Staff Club, CDFST, Udaipur and member of various administrative committees of College and University.
