1936 notierte Samuel Beckett in seinem deutschen Tagebuch mehr als fünfzig Speisen und Getränke, die er während seines neunwöchigen Aufenthalts in Hamburg zumeist in Gaststätten, Kneipen und Restaurants kennengelernt hatte, davon viele Gerichte aus hamburgischer oder norddeutscher Küche. Kaum eines der von Beckett besuchten Lokale gibt es heute noch und auch die Küche in Hamburg hat sich wie im restlichen Deutschland in den letzten Jahrzehnten sehr verändert, in den Restaurants ebenso wie am heimischen Herd. In jüngerer Zeit gibt es eine Rückbesinnung auf die regionale Küche. Da kleine Geschäfte, die einst regionale Produkte anboten, nahezu verschwunden sind, erfreuen sich Wochenmärkte vielerorts wieder großer Beliebtheit. Auch die Kochbuchauswahl hat in dieser Hinsicht erheblich zugenommen. Ist dies ein neuer Trend zurück zu einer bereits vergangen geglaubten Küche? Oder hat die regionale Küche in den privaten Haushalten immer überlebt und war nur von einer durch veränderte Essgewohnheiten, Tiefkühlkost und Takeaways verstellten Wahrnehmung ein wenig in den Hintergrund geraten? Ein Blick in die Küchen in Hamburg während der vergangenen rund 75 Jahre scheint hier lohnend. Wie und was aß man in den Notzeiten während und nach dem Zweiten Weltkrieg? About the Author :
Der Verein für Hamburgische Geschichte wurde 1839 gegründet. Er bemüht sich um die hamburgische Geschichtsforschung und will breiteren Kreisen die geschichtlichen Grundlagen ihrer Gegenwart bekanntmachen. Claudia Thorn ist freiberufliche Historikerin und Buchhändlerin. Seit 2007 Vorstandsmitglied des Vereins für Hamburgische Geschichte, wo sie sich besonders dem Arbeitskreis "Erinnerung" und der Redaktion des "Tiedenkieker. Hamburgische Geschichtsblätter" verbunden fühlt.
