About the Book

Starch is produced industrially on a large scale from various plants such as corn, tapioca and potato. It is renewable, "green" and cheap. Besides the classical applications of starch in food products, the paper- and textile industry and the use as adhesives, new applications as super absorbents and bioplastics have been developed. The increase in knowledge about the structure of the starch granule presents possibilities for specific modifications. An important goal of the starch industry is to create products that are sustainable thereby reducing reliance on non renewable resources. This book describes a number of new developments and addresses topics such as: relation between granular structure and derivatization; derivatization in aqueous alcohol; new starch esters; use of spacers in derivatization; enzymatic derivatization.
