About the Author :
Tracy Minton-Matesz is a certified clinical hypnotherapist with a Masters Degree in Oriental Medicine, specializing in food therapy. Upon completion of certification in plant-based nutrition from the T. Colin Campbell Foundation and e-Cornell, and an online macrobiotic counselor certification course, she and her husband Don adopted a low-carbohydrate, high-fat and protein diet. While eating a diet centered around grains, greens, and beans, Tracy mastered preparing whole plant foods as simply as possible without scrimping on flavor. She has now expanded her repertoire to include super simple and delicious whole foods, including eggs, fish, and a variety of meats, and bone broths. Tracy has experienced many dietary styles after spending many years attempting to heal various health conditions she experienced since childhood, including allergies, childhood anemia, digestive problems, and hypoglycemia. She and her husband followed a vegan macrobiotic diet for over five years before realizing that many of their ongoing health issues were from being highly sensitive to a consumption of excess carbohydrates. Since switching to a low-carb, high-fat diet, they have had great results.
