These solids will not be all sugar, but it seems that in course of fermentation some of them, not originally sugar, become converted into saccharine substance capable, so to speak, of evolving alcohol Hitherto, in speaking of fermentation, I have intended vinous fermentation only, as that is the sole kind of fermentation cider should undergo. But when such vinous fermentation has advanced so far as to have converted all, or nearly all, the saccharines into alcohol, at which point the cider will have become, as some term it, "dry," and some " hard," this vinous fermentation will be succeeded by acetous fermentation, which, if allowed to continue, would turn the cider into vinegar. Acetous fermentation would, after a time, be followed by putrid fermentation, which would, of course, spoil the liquor for any purpose; but this is a stage I need not deal with, as it is to be hoped that it would never be reached in the establishment of any careful and cleanly cider maker. But acetous may, and often does to a certain extent, succeed the vinous fermentation, rendering the liquor sharp as well as hard---a kind of drink often found in farmhouses, and even relished by those used to it, who style it good bread-and-cheese drink because it "cuts the way."
