Bannocks are most generally made of oatmeal; but they are sometimes made of barley-meal, as appears by the quotation from Bannatyne, and from the song called Bannocks of Barley-meal, (see Scotch Songs, ii. 130;) and sometimes of pease-meal, (see Heron's Journey through Scotland, ii. 316.) In general, bannocks are"kueaded with water only, and baked, or rather toasted, by being laid or set upright against a stone near the fire," (see Pennant's Voyage to the Hebrides, ii. 281;) but sometimes they arc enriched with a little butter or cream, ...
