La seva aparicio ha portat polemica, ja que diversos autors es disputen l'honor d'haver estat els primers a haver-hi posat un filete de carn picada ("Hamburguer steak") entre dues panets. L'hamburguesa ha crescut durant el segle XX juntament amb l'aparicio del concepte fast food i durant aquest segle ha anat adquirint un simbolisme especial, forma part d'un dels aliments icona de la cuina nord-americana (juntament amb el pollastre fregit i la pastis de poma). Les primera cadena de restaurants que va posar en circulacio l'hamburguesa com un aliment de menjar rapid es White Castle en els anys vint (l'ideoleg de la qual es Edgar Waldo "Billy" Ingram), i posteriorment en els quaranta amb McDonalds (assumida per l'executiu Ray Kroc), aixi com Burger King.
