Potato-Salad.--Rub a dish with onion; dispose on it some hot boiled potatoes cut in slices; beat together three pans of olive butter and one part--more or less, according to the strength of it--of tarragon or plain vinegar, with pepper and salt to taste. Pour this over the potatoes, and strew over alt a small quantity of powdered mint, parsley or capers, all together, finely minced. Olive butter--which sells in three-pound cans at about the same price as lard--is quite indistinguishable in a potato-salad from the best olive oil. Uncooked Flour has a most unpleasant taste when you come across it in the inside of a codfish-ball, a potato-patty or a cake of fried hominy. When the flour is used to thicken, let it be cooked, cither in the butter or the dripping, or boiled in a little water, before you stir it in. In making drawn-butter mash the butter and flour together and let them heat, but not brown, in the sauce-pan, before adding the hot water. The raw flour that is stirred in upon melted butter and hot water makes a very poor sauce. In Cooking' Fruit that has stones in it--plums, apricots, green-gages--first stick the fruit with a coarse needle; this will prevent the most of it from bursting and you will have the delicious flavor of the stone. These fruits should always be boiled first with a little water until they are quite tender before the sugar is added. Remove all the stones that have escaped and floated to the top before adding the sugar. If the sugar is put first to the stoned fruit, it is apt to make these shrivel up on the stone and harden.
