Add the sugar to the beaten yolks and beat well, mix with the cold apple, then stir in the lemon and half of the rind grated and the crumbs. Line and rim a plate with rich pastry, fill and bake, and when done cover with the meringue made with the whites, powdered sugar and lemon juice. Color slightly and serve cold. No. 3. One third cup butter, two cups sugar, four eggs, two lemons, one saltspoonful salt, one cup cream, two cups grated apples, two tablespoonfuls sherry wine. Cream the butter with one cup of the sugar, beat the eggs without separating, add the other cup sugar, and beat until light. Put the two mixtures together, add the lemon juice, and the grated rind of one lemon. Whip the cream, grate the apple quickly, then mix all together, adding the wine, if you approve, last. Turn into deep pie plates lined with rich paste, cover with a crust and bake until the crusts are a delicate brown and well done. CREIGHTON OYSTERS. Put into the chafing-dish one tablespoonful butter, one tablespoonful flour, one saltspoonful paprika, one saltspoonful salt, one tablespoonful mushroom catsup, one teaspoonful lemon juice and one tablespoonful A. I. sauce. Cook five minutes, add one pint oysters picked over and drained, and cook until the edges curl. Serve on wafers or toast. CREAMED EGGS. Put into the chafing-dish one teaspoonful butter and place the pan over the bath. Beat three eggs slightly, add half a cup thin cream and a saltspoonful pepper. Turn into the butter and stir constantly as it thickens. Sprinkle with salt and turn out while moist and soft. FONDUE.
