About the Book

Fruitful is a trip to the local orchard, overflowing with ripe, seasonal produce—and it's not just desserts! From sweet to savory, including fresh juices, every chapter is devoted to the produce of the moment: rhubarb, strawberries, apples, plums, apricots, peaches, quinces, pears, and more. This delectable cookbook showcases the bounty from New York's favorite orchard, illustrated with gorgeous full-color photography throughout—but all of the fruit can be found wherever you live. Pies and cobblers are only the beginning of four seasons of recipes celebrating fruit: Strawberry-Black Pepper Granita, Spicy Roast Chicken with Rhubarb Chutney, Scallop and Blueberry Ceviche, Grilled Peach, Shrimp, and Prosciutto Skewers, and Rustic Apricot and Raspberry Crostada offer a taste of the juicy dishes inside. And twenty-five recipes will come from fruit-loving chefs who count themselves among Red Jacket's devoted customers: a few of the contributors include Dan Barber, Jonathan Waxman, Karen DeMasco, and Melissa Clark. Whether it's a bushel of peaches or a bundle of rhubarb, you'll find plenty to dish up here.

Review :
"Red Jacket's fruit, popular with New York City chefs, comes to your table with inventive dishes incorporating the ripest ingredients." --USA Today "There's a new way to follow the biblical exhortation to be "fruitful and multiply" without adding to the population explosion. Go through Brian Nicholson and Sarah Huck's beautifully illustrated Fruitful: Four Seasons of Fresh Fruit Recipes, select from the 140 recipes and, as you add them to your repertoire, the number of delectable, peak-picked fruit dishes will multiply as will the compliments you get. Nicholson grew up on his family's fruit farm in upstate New York tending and cultivating flavor, and he has imbued this cookbook with that same loving care. In seasonal sections, each fruit gets its full due, with practical growing tips, advice for preserving and sensational seasonal recipes." --BookPage "This is a great addition to any kitchen bookshelf." --Sante Magazine "Fresh fruit is a year-round celebration with this gorgeous new cookbook." -- --The Oregonian "Fruitful is truly a unique book; one look and you'll know this is not your ordinary cookbook. ...This book is full of wonderful recipes and beautiful pictures for you to enjoy!" ----Flour Me with Love.com "'All hands and dirt and heart and soul'--a description of Red Jacket founder, Joe Nicholson, in Brian Nicholson's introduction, but it could just as easily be the motto of Red Jacket Orchards itself. Never has the job of growing both community as well as product appeared more meaningful than in the pages of this wonderful book, whose recipes take you through the seasons with grace and aplomb, leaving you wiser--and more joyful--for the journey." --Dan Barber, chef and co-owner, Blue Hill and Blue Hill at Stone Barns "Fruitful is the book we need now! This heartfelt work about growing, tending and finally putting this glorious fruit on the table inspires me to my roots. You just know that this is fruit as it's supposed to be: rich with flavor, promise, and goodness, the result of generations fine-tuning their most important art." --Deborah Madison, author Vegetable Literacy “Red Jacket's fruit, popular with New York City chefs, comes to your table with inventive dishes incorporating the ripest ingredients.” —USA Today "There's a new way to follow the biblical exhortation to be “fruitful and multiply” without adding to the population explosion.
