In addition to the treatment described, patients would do well to be guided and guarded in their eating and drinking by the following remarks, summarised by Dr. Ruddock, on "Dyspepsia" --First, Mastication.--The reduction of food to a state of minute division in the mouth is the first step towards easy and complete digestion. Solution is the real meaning of digestion, and, as solid substances, intended by the chemist for solution, are first reduced in the laboratory by the pestle and mortar, so must the teeth perform a precisely similar process with the food. Not a particle capable of being further reduced by the teeth should be admitted to the stomach. "It was said lately that Mr. Gladstone's magnificent condition of health was greatly owing to the fact that he chewed every bit of animal food of which he partook thirty-eight times." A stomach, especially a weak one, does not act quickly upon food introduced in an incomplete state of comminution. It is also required that food should be well masticated, that it may be duly mixed with saliva. The parotid gland in front of the ear, the submaxillary beneath the jaw at the sides, the sublingual under the chin; all these secrete saliva which pours into the mouth through minute openings during mastication. This is not only intended to moisten and lubricate the food, but is a most essential chemical aid to digestion, such as no other liquid can supply. The action of the saliva is particularly necessary for the digestion of vegetable food, for it is only by means of this fluid that such articles of food as potatoes, bread, rice, &c, are at all rendered capable of absorption.
