Excerpt from book: DAINTY TEAS. 135. Kaiser Cake. Ingredients.?4 eggs, J Ib. sugar, Ib. butter, i teacupful milk, Ib. flour, i teaspoonful of baking-powder, lemon. Beat the sugar and butter to a cream, stir in the eggs separately, grate the lemon-peel, and add it with the milk. Stir in the flour and baking- powder and mix all well together. Pour into a mould and bake in a good oven for one hour. 136. Butter Cakes. Ingredients.?. Ib. butter, 2 eggs, Ib. castor sugar, 4 ozs. almonds, oz. ground cinnamon, oz. ground nutmeg, J oz. ground cloves, i lemon, i Ib. flour, 2 tablespoonfuls of brandy. Beat the butter to a cream, beat the eggs well and chop the almonds. Mix these ingredients well together and add the sugar, spices, grated lemon peel, and flour. Moisten with the brandy. Workall well together on a pasteboard, roll about half an inch thick and cut into shapes. Bake in a slow oven till a light brown. Sift sugar over. 137. Bassumer Cakes. Ingredients.?4 ozs. flour, 7 ozs. butter, 2 ozs. castor sugar, 2 eggs, lemon. Beat the butter to a cream; grate the peel and mix in with the sugar and eggs, and lastly the flour. Form into small balls, strew over them some coarsely crushed sugar, and bake in a quick oven for one hour. 138. Shortbread. Ingredients.?6 ozs. flour, 2 ozs. ground rice, J Ib. butter, 2 ozs. castor sugar. Rub the ingredients well together in a basin, then work them on a board until the paste is soft and will roll about an inch thick. Cut into oval cakes and pinch round the edges. Bake in a slow oven for about one hour. 139. Bremen Cakes. Ingredients.?5 ozs. flour, 4 ozs. butter, 3 ozs. castor sugar. lemon, i egg, almonds, baking-powder.
