Fische, die sich unter naturlichen Bedingungen von Plankton und Algen ernahren, sind reicher an EPA und DHA als Zuchtfische. Fur ihren hohen Gehalt sind vor allem Makrele, Hering, Lachs, Heilbutt, Thunfisch und Aal bekannt. Auch die Fleischgerichte in diesem Buch sind sehr schmackvoll: Pfeffer-Roastbeef mit Minzesauce Zutaten: 2 kg Roastbeef, 5 TL bunter Pfeffer fertig gemischt 8 Pimentkorner, 3 TL grobes Meersalz 3 EL Olivenol, 2 Stangel Pfefferminze 250 g Schmand, 300 g Vollmilchjoghurt, 1 Beutel Pfefferminztee Salz, 2 EL Obstessig, Etwas Ol Zubereitung: Das Fleisch mit der zerstossenen Pfeffermischung, Piment und Meersalz und etwas Ol rundum einreiben. Fleisch im heissen Ol von jeder Seite ca. 5 Minuten von allen Seiten bei mittlerer bis starker Hitze anbraten. In die heisse Ofenform legen und bei 130 Grad ca. 90 Minuten garen. Minzblattchen von den Stielen abzupfen und im Schmand fein purieren. Mit Joghurt, Tee aus dem Beutel, Salz und Essig verruhren und kalt stellen. Das Roastbeef in Scheiben schneiden, mit der Minzsauce servieren. Sie konnen das Roastbeef schon am Vortag braten, abkuhlen lassen und in Folie gewickelt kalt stellen.
